Coconut & Cashew granola

Thank you Susannah for giving us another granola recipe! We LOVE it! Maybe more than our other one!

Ingredients:
7 C oats
2 C cashews (can do slivered almonds if you would rather or mix it up)
1 C unsweetened shredded coconut
2 tsp- 1 TBLS cinnamon (I don't measure)

1/2 C olive oil
1/2 C molasses
1/2 C honey

Directions:
Mix first 4 ingredients in a large mixing bowl.  Heat the other 3 on the stove in a small pot until just boiling. (careful not to let it boil over)  Pour over the dry ingredients and mix until it's all well coated.  Pour onto 2 baking sheets and Bake at 325 for 20 minutes stirring once half way through. (I don't stir but i do rotate the trays. Top rack moves to the bottom and bottom to top :) Your house will smell AMAZING while it's in the oven too!

Love the granola with dried apricots and raisins just before serving with almond milk.
Or with plain GREEK yogurt, sliced apples, and honey.
Or with plain GREEK yogurt, honey and blueberries
Or with plain GREEK yogurt, a banana and a little peanut butter (the banana sweetens it up enough for me to not even need honey this way)
