Stuffed Peppers

Ingredients:
6 bell peppers
1 onion, chopped
1 lb ground beef
1 tsp oregano
1/2 tsp basil
1 C cooked brown rice
1 C frozen corn
2-3 diced tomatoes
1 C crumbled Feta cheese
garlic powder, onion salt, salt and pepper to taste

Directions:
Cut tops off peppers. (I chop these up and add them to the mix as well. No sense in just throwing them away.) Pull out seeds and membranes. Boil in a pot of water for about 10 minutes. (This makes it so that you don't HAVE to bake them. The peppers are already soft! :) )


In a pan on the stove, brown hamburger with the chopped onions and green chopped pepper tops, drain off grease. Add the corn, rice, and seasonings. Mix well and heat through. Add tomatoes and Feta. Mix well again.

Spoon hot mixture into empty peppers and serve.

This mixture freezes well too, and makes quite a bit. So I just serve up what we need for the night and then put about 2 C into a sandwich bag and freeze. (Usually makes 2 bags to freeze, since all together it would stuff 6 peppers.) Then all you have to do is boil more peppers for when you want to have it again. Heat the mix in the mirco and voila! Dinner is served!
