This recipe totally comes from my favorite cookbook Saving Dinner! My husband has made this one too! So, I don't think it can really be messed up!
Ingredients:
2 TBLS olive oil
1 onion, chopped
3 cloves garlic, pressed
2 cans black beans, drained
2 medium sweet potatoes or yams, cooked and mashed
1 tsp cumin
Whole wheat or corn tortillas
Toppings: choose what you like
fresh cilantro
shredded cheddar cheese
Diced tomatoes
Sour cream
Spinach
Chopped green onions
Directions:
Bake your yams until they are soft. I scrub mine, and poke with a fork all over. Wrap them in foil and bake them at 400 F for 40-60 minutes depending on their size.
In a skillet, heat oil over medium-high heat and cook onion and garlic until soft.
Add beans and cumin.
Stir to combine. When yams have cooled enough for you to handle, the skin should fall right off and you can scrape the yam into the pan. For now, it still looks pretty :)
Once it's all mashed together it's not as pretty, but it sure is yummy!
To serve, heat tortillas and plop the bean mixture inside, add toppings of your choice and roll up like a burrito.
OR spread a layer of mixture on one tortilla, sprinkle with cheese, top with another tortilla and cook in a pan like a quesadilla, turning over once to crisp on each side. Cut into triangles and serve with your favorite toppings.
Making this one tonight, smelling good....I LOVE sweet potatoes!
