Corn Muffins

Ingredients:
1 C cornmeal
1 C whole wheat flour
2 tsp baking powder
1 tsp baking soda
2 eggs
3/4 C buttermilk, OR add 1 TBLS vinegar to plain milk
1/2 C honey
1/4 C olive oil or Unsweetened Applesauce

Directions:
Preheat oven to 375.  Spray muffin tins with olive oil, or use cupcake liners.
In a large bowl, combine dry ingredients.  Add the rest of the ingredients and mix until blended.  I just use my spatula to mix it all up.  No need to get out the hand held mixer for these.
Using the 1/4 C measuring cup I scoop the batter into the muffin tins.  Fills 9-15 depending on the size muffins you make!

Or if you are short on time, you can just pour it all into a 9X13 pan too! :)

Bake for 15 minutes or until slightly golden.  Let cool for a bit in the tin, then pull the muffins out to cool on a rack.

Or if cooked in the 9X13, just cut up into squares to serve.
One can bet that we will be having these too, if we are having chili for dinner.  Also great as a snack!  With some butter and honey, it's a treat! So easy, and so yummy!
