Asian Burrito

Found a recipe to make my own Hoisin sauce so we HAD to try these burritos! HUGE hit!  The kids devoured them! (No leftovers!)  Cabbage, ginger salsa and all!  YUM YUM YUM!! I love it when new recipes are not duds! 

Ingredients:
1 lb ground turkey
1 C oats
3 TBLS water
6 TBLS soy sauce
2 TBLS real peanut butter
1 TBLS honey
2 tsp rice vinegar
2 tsp tahini 
1/8 tsp pepper
1/8 tsp cayenne pepper (optional)

Whole wheat tortillas
2 C shredded cabbage
2 carrots, grated
       
     Ginger salsa:
     2 tomatoes
     chopped cilantro
     2 tsp finely chopped fresh ginger

Directions:
Prepare ginger salsa and set aside.
In a skillet, cook ground turkey (or beef) until browned.  Drain grease and stir in oats.  Add oats through cayenne on the ingredients list.  Let simmer for a few minutes to blend flavors.
Warm tortillas and fill with meat mixture, top with cabbage and carrots, and the ginger salsa.  Wrap it up like a burrito to enjoy!

EXTRA: Sometimes the meat gets pretty dry with the oats soaking up all the juice.  So I add 1/4 C water at a time until it's the consistency I would like to put in my burrito. Sometimes only 1/4 C sometimes 1/2 C.

ALSO if you are avoiding gluten this is great as a salad! Loose the tortilla and pile some meat on your bed of cabbage and carrots, topping with the ginger salsa! So fresh. So yum!
