Here's a twist on an old classic called Waldorf Salad. LOVE all these strong flavors together. They all balanced SO well!
Ingredients:
8 oz Spinach
4 oz Arugula
1 Crisp Apple, we like Fuji, sliced thin or chopped
3 celery stalks, we cut ours into small matchsticks
1 C walnuts, chopped
1 small red onion, sliced into long strips
3/ 4 C unsweetened craisins
4 oz smoked Gouda, shredded
Directions:
We enjoyed this with our Poppy-seed dressing!
