Just another idea for a breakfast muffin. (To be made the night before of course :) Lots of great stuff in there!
Ingredients:
2 C Whole Wheat flour
1/2 C honey
1 ripe banana, mashed
2 tsp baking soda
2 tsp cinnamon
1/4 tsp salt
2 C shredded carrots
1/2 C raisins
1/2 C walnuts or pecans
1/2 C unsweetened coconut flakes
1 apple, peeled, cored and shredded
3 eggs
1 C applesauce
2 tsp vanilla
Directions:
Mix all ingredients in a bowl and scoop out into muffin tins. Bake at 350 for 20 minutes.
