Coconut & Cashew granola

Thank you Susannah for giving us another granola recipe! We LOVE it! Maybe more than our other one!

6 C oats
2 C slivered almonds
2 C cashews
1 1/2 C unsweetened shredded coconut
1/2 C olive oil
1/2 C molasses
1/2 C honey
1/4 C pure maple syrup (or just more honey or molasses if you don't have this)

Mix first 4 ingredients in a large mixing bowl.  Heat the other 4 on the stove in a small pot until just boiling. (careful not to let it boil over)  Pour over the dry ingredients and mix until it's all well coated.  Pour onto 2 baking sheets and Bake at 325 for 20 minutes stirring once half way through. Love this one with dried apricots and raisins just before serving with almond milk. YUM YUM YUM! Not to mention how amazing it makes your house smell while it's in the oven!
