GIANT Meatballs (to go with spaghetti)

While trying to cook and eat more healthy, finding new recipes we can use is always nice.  We had a fun breakthrough tonight!  I've wanted to figure out something to "replace" bread crumbs in a recipe.  (Get rid of the enriched, bleached flours, hydrogenated "stuff", sugars, etc. ) We decided to try blending oats into a flour and substituting the oats for the bread crumbs!  Worked great!  NEVER would have been able to tell the difference.  So excited about this new find.

Ingredients:
  • 1 pound lean ground beef
  • 1 cup blended oats
  • 1/2 TBLS Italian Seasoning
  • 1 TBLS dried parsley
  • 1 TBLS grated Parmesan cheese
  • 1/4 tsp ground black pepper
  • 1/8 tsp garlic powder
  • 2 egg

Directions:
Mix all ingredients in a bowl.  Combine well.  Shape into 12 balls.
Brown slightly in saucepan for 5 minutes. Turning carefully with slotted spoon.
Pour your favorite spaghetti sauce over the slightly browned meatballs, cover and simmer for 30 minutes.  Enjoy with whole wheat spaghetti noodles, rice noodles, or spaghetti squash!
