Okay, so I'm not going to lie...I don't have a salad EVERY day! Once in a blue moon I'll have leftovers (if there's not enough for another meal for the whole family :) And sometimes I'll even have a sandwhich! Just pile on the veggies baby!
Ingredients:
This is what's pictured. Obviously, like the salad, the possibilities are limitless...
2 slices of Whole wheat seed bread
spread with hummus, mustard, or both!
tomatoes, sliced
cucumbers, sliced
red peppers, sliced
mushrooms, sliced
avocado, sliced
spinach
Now that's a sandwich!
