Loaded Vegetable Soup

I think I could seriously have soup and salad every night for dinner! This is another (new) favorite!

2 celery stalks, sliced
1 onion, diced
3 cloves garlic, pressed
2 lbs ground turkey
1 can diced tomatoes
1 carton (4 C) good beef stock
1 red bell pepper, diced
2 green bell peppers, diced
4 carrots, peeled and sliced
5 red potatoes, chopped
1 small can tomato paste
1/2 tsp salt
1/2 tsp black pepper
2 tsp dried parsley flakes
1/2 tsp oregano
1/4 tsp cayenne

In a large pot brown meat together with celery, onion and garlic.  Then add remaining ingredients and stir to combine.  Bring to a boil, then reduce heat and cover.  Simmer for 20 minutes, until potatoes are tender.
