Minestrone Soup

Yes...another soup! But it's awesome!

1 lb. ground turkey
1 onion, chopped
1 C celery, chopped - try to include some of the leaves, they are the most flavorful
2 garlic cloves, pressed
1 (28 oz) can diced tomatoes
6 C good beef stock
Salt and pepper
2 tsp oregano
1 C kidney beans
2 medium zucchini, cubed
1 Tbsp parsley
2 C whole wheat penne noodles
Fresh Parmesan cheese

Brown ground turkey. Add onions, celery, and garlic; sauté until soft. Add tomatoes and beef stock and bring to boil. Add salt, pepper, oregano, kidney beans, zucchini and parsley. Bring to boil, then add penne noodles. Simmer 9 minutes or until noodles are al dente. Serve with Parmesan cheese on top.
