If you've got some leftover cooked quinoa then this snack comes together very quickly!
1/2 C cooked quinoa
3 TBLS chia seeds
1 TBLS flaxseed
1 2/3 C almond milk
2 tsp cocoa powder
1/2 C Greek yogurt
Mix together the cooked quinoa, chia seeds, flaxseeds, almond milk and cocoa powder. Allow to sit in the fridge for several hours or overnight. This is your "pudding."
Make your parfait layering "pudding", yogurt and berries in a glass. Top with honey if you would like it a bit sweeter!
