Whole wheat tortillas

Ingredients:
1 3/4 C whole wheat flour
1/4 C ground flaxseed
1/2 tsp salt
3 TBLS olive oil
3/4 C warm water


Directions:
Mix all ingredients and divide into 8 balls. (We TRIPLED the recipe and made a bunch -2 dozen- on Sunday) To keep the dough from drying out place a towel over while you work with each one.  One at a time.
Place a piece of wax paper down on your working surface.  Put a ball of dough then cover with another piece of wax paper.  Using a rolling pin, roll out thin!

Cook tortilla on a very hot pan, flipping over after about 1 minute.  You should see bubbles. If they aren't bubbling and browning, then it's not hot enough.

Beautiful homemade whole wheat tortillas!
Perfect in place of any store bought tortillas.  Burritos, enchiladas, quesadillas, and wraps to name a few.

Dinner rolls

Seriously?!?! More bread? Yes, they are that good! :) Hot rolls if you only have an hour to make them.  Yes please!

Ingredients:
1 C very warm water
2 TBLS dry yeast
1/4 C honey
1/3 C melted butter
1 tsp salt
1 egg
3-3 1/2 C whole wheat flour

Directions:
In a large mixing bowl combine water, yeast and honey.  Allow to sit for 15 minutes.
Add melted butter salt and egg.
Stir in flour.  Cover and allow to raise for 10 minutes.
With your hands shape into 16 balls.  Halves work easily for me.  Twist the dough in half, then each in half, those pieces in half, etc....until you reach 16 blobs.
Place balls on a buttered cookie sheet, cover and let rise for 20 minutes.
Bake at 375 for 15 minutes.

It was also recommended to melt 3-4 TBLS butter and mix in 1 TBLS honey to spoon over the hot cooked rolls.  YUM YUM  I think I'll agree with that recommendation.

Simple 100% Whole Wheat Bread

This makes 2 large loaves of slightly sweet, dense, yet soft and yummy whole wheat bread!


Ingredients:
9 C whole wheat flour
1 1/2 tsp salt
3 C hot water
3/4 C coconut oil
3/4 C unsweetened applesauce
3/4 C honey
2 TBLS yeast

Directions:
I just put all the ingredients into my Bosch.  Let it mix up really well.  Then divide in half and dump into  greased loaf pans. (I used coconut oil to grease the pan)  Cover with a hot wet towel and allow to rise.  When loaf is at desired height, bake at 350 for 30-45 minutes.

French Bread

This turned out way better than I had hoped! Even though I didn't have the pan it said to cook it in (a baguette pan) we gave it a go and were pleasantly surprised! YAY for more great whole wheat bread!

Ingredients:
1 1/4 C Water
2 TBLS Honey
1/2 TBLS Yeast
3 TBLS melted butter
2 C whole wheat flour (+ another Cup or so to knead in with your hands)
1 tsp salt

Directions:
Combine water, honey and yeast and let sit for 5-10 minutes.  Then add the melted butter.
In another bowl combine 2 C flour and salt.  Add the liquid to the flour mixture and combine.  The dough will still be sticky and wet.  Allow to rise for 20-30 minutes in the bowl. (I covered mine with plastic wrap)
Flour your countertop and dump dough out onto the flour and begin kneading in.  Knead in enough flour that it no longer sticks to your hands. Apparently the longer you knead whole wheat bread the better the texture will be.  I did it for as long as my arms could handle. (Will probably do this all in the Bosch next time :) And double it to make 2 loaves)
Butter your pizza stone (or whatever you will be baking your bread on) and sprinkle with corn meal.  Roll your dough into a nice fat snake and place on your prepared stone.  Cut slits in the dough and allow to rise for 20-30 minutes. 
Bake at 350 for 30 minutes and this is what you'll get.
We enjoyed ours with some homemade lasagna.  It was a great alternative to our normal bread-sticks!  Huge hit all around!

Chicken-Veggie Pockets

Ingredients:

     Homemade Whole Wheat Pitas

     Pita Filling:
     1 C walnut or pecan halves, chopped
     1-2 Carrots, peeled and chopped
     6 radishes, chopped
     1 zucchini squash, chopped
     1 chicken breast, cooked and shredded or chopped
     2 C spinach, chopped
     Ranch dressing (see below)

   
     Dressing:
     5 TBLS milk
     3 TBLS plain Greek yogurt
     1/2 TBLS vinegar
     1/4 tsp onion powder
     1/4 tsp dried dill
     1/2 tsp dried parsely
     1/2 tsp salt
     sprinkle of black pepper
     (Mix in a bowl with a fork until combined)

Directions:
Make your pitas.  I allowed mine to rise longer tonight (just over and hour) and they worked even better!
Chop your veggies, chicken and nuts and mix together in a bowl.
Pour on the Ranch and stir to incorporate.
Stuff the pitas with the chicken mixture and go to heaven!

Cinnamon Raisin Bread

Yay I found another healthy breakfast idea!  This recipe said it was best used in a bread machine, but since I don't have one of those, I just did it like this.  Seemed to work. YUM!

Ingredients:
3 C whole wheat flour
2 tsp cinnamon
1/2 tsp salt
1 C hot water
1/2 C coconut oil
1/4 C honey
2 tsp yeast
1 C raisins

Directions:
Mix up all your ingredients with a fork and dump into a greased loaf pan. (I used coconut oil to grease the pan)  Cover with a hot wet towel and allow to rise.  I wanted to speed up the process so ever 20 minutes or so I would re-wet the towel in very hot water and cover the bread again. :)
When loaf is at desired height, bake at 350 for 30-45 minutes.  Excellent filling toast for breakfast!

Whole Wheat Biscuits

I grew up with the BEST biscuits!  But, like most things, have had to try and figure out how to "clean them up" a bit.  I finally figured out how to make them yummy with whole wheat!  Yay! Now we have another option to have with soup! :)

Ingredients:
2 C whole wheat flour
4 tsp baking powder
1/2 tsp salt
1/2 C coconut oil
1 TBLS honey
1/3 C milk
1 egg

Directions:
Preheat oven to 425.  Mix flour, baking powder, and salt.  Cut in coconut oil with a fork.  Add the honey.  Combine the milk and egg in a separate bowl, then pour into the flour mixture, but only enough to moisten.  May or may not use it all.  Turn dough onto a lightly floured surface and roll dough out to 3/4 inch thickness. Cut out biscuits with a 2 inch cutter (Mason jar or glass cup works great)  Place on a baking sheet and bake for 9 minutes, or until golden brown.

100% Whole Wheat rolls

Ingredients:
2 TBLS yeast
1/2 C warm water
1/2 C butter, softened
1/4 C honey
3 eggs
1 C milk or Almondmilk
4 1/2-5 C whole wheat flour
1 1/2 tsp salt

Directions:
Dissolve the yeast in the warm water.
Cream the butter and honey in a mixing bowl.  Add the eggs and milk.  Add the yeast mixture.
Add 4 1/2 C of flour and the salt.  Mix until combined. Let the dough hook knead for 2-3 minutes, just until no longer tacky, adding a TBLS or 2 of flour as needed.
Let the dough sit in the bowl, covered, to rise for an hour.
Turn out onto a floured surface and knead a couple times, then let rest for 3 minutes.
Here is where you are supposed to divide the dough into 24 equal pieces, and place balls in a 9X13 buttered baking dish, with pieces touching.  But we thought that for a fun activity for Thanksgiving we would let the kids just break off pieces and throw them into a bundt pan.
They loved it!
Then, however you decide to do it, cover that pan and let rise for another hour.
Preheat oven to 350 degrees, and bake for 20-25 minutes until golden brown.  (For the bundt we baked them a bit longer.  Almost 35 minutes.)

When it came out, we buttered all over.
Not only was this a fun activity to do with the kids, but the bread itself was delicious! Wonderful 100% Whole Wheat bread!  And the kids LOVED just grabbing off pieces :) Can't wait to make these again as just rolls! Glad we came across this website!
Made these again but this time as rolls in a 9X13 pan.

I'll have to figure out the temp and adjust that a bit with the baking time, but for the most part they were fantastic! (All of them were gone at the end of dinner, so I guess everyone liked them! :))

Whole Wheat Pita Bread

When making falafel for dinner my husband decided it would be fun to have it with pita, like it's "supposed" to be eaten! He found this recipe at food.com.  We were excited to try something new, but definitely nervous about whether they would turn out or not.  We were more than happy with the final product!  A new favorite for sure!

Ingredients:
3 C whole wheat flour
1 TBLS yeast
1 1/4 C very warm water
1/2 tsp salt
Italian Seasoning (optional)

Directions:
Preheat oven to 500 degrees! (This was the first time I have ever cooked something at this temperature!  Kind of exciting!)  Stir together 2 C of the flour and the yeast, then add the water and salt.  Gradually add more flour until the dough is no longer sticky and you can mold it with your hands.  (This is where you would add your optional seasonings and knead it in as well.)  We sprinkled in bunch of Italian seasoning.  I can imagine fresh herbs would be just amazing!
The recipe said it would make 10 pitas, but we decided we wanted them a bit bigger, so we formed the dough into a fat snake and cut it into 8 sections instead.
Then on a floured surface roll out each ball until about 1/4 inch thick.
Place on a nonstick baking sheet and allow to raise for 30 minutes.  Pictured below is before rising...
 And here they are after rising!  Not much difference, but we were still feeling hopeful!
Bake on the bottom rack for 5 minutes.  Some puffed, some didn't really, some REALLY did!  I'll have to make them more to know why.  But they all worked as pitas and tasted great!
Once they've cooled a bit, enough to handle, slice in half, carefully separate (we used a knife) the sides. and stuff 'em with your favorites!   For dinner that night we stuffed our falafel inside, then poured on the yogurt-dill dressing. (pictured without the dressing)
 Leftovers for lunch the next day, I stuffed it with my friend Desiree's hummus, chopped tomatoes, yellow peppers and sprouts!

 We stored extra pitas in a ziploc bag and if the pita felt a bit hard, just microwaved it for 10 seconds before filling it up. YUM!!!

Veggie Sandwich

Okay, so I'm not going to lie...I don't have a salad EVERY day!  Once in a blue moon I'll have leftovers (if there's not enough for another meal for the whole family :)  And sometimes I'll even have a sandwhich!  Just pile on the veggies baby! 
Ingredients:
This is what's pictured.  Obviously, like the salad, the possibilities are limitless...
spread with hummus, mustard, or both!
tomatoes, sliced
cucumbers, sliced
red peppers, sliced
mushrooms, sliced
avocado, sliced
spinach

Now that's a sandwich!

Buns & Breadsticks

This is the same recipe I use for our whole wheat pizza crust.  1 batch makes 6 buns.

Ingredients:
1 TBLS yeast
1 TBLS honey
1 tsp salt
1 1/2 C hot water
3 C Whole wheat flour (the amount of flour isn't exact.  You just don't want the dough sticking to your fingers, but like all breads, be careful not to add too much flour.)

Directions:
I put everything into a bowl, and give it a quick mix.  Then I add the flour a bit at a time. I just use a fork to mix it all! :)  Once it looks like it's coming together pretty well, I turn it out onto the counter and kneed it, adding more flour if needed, for about 2 minutes.  I divide it into 6 parts, then roll into balls and place on a cookie sheet.  I spray with olive oil.
Then I let them rise for about 15 minutes. (You can tell I don't make the balls the exact same size.  I just eye ball it.)
Then I bake them at 400 for about 12 minutes.  Let your nose help you know when they are done :)
 They have totally replaced store-bought hamburger buns in our house!  They work great for black bean burgers, so I thought we should try some leftover Italian-style pot roast on them.  HUGE hit!  The kids devoured them! (Although I totally should have taken a picture of Christian's.  He put red onion slices, green pepper slices, and a pile of sprouts on his!  Looked beautiful and tasted just as well!  I had one that way the next day for lunch! :)
Very versatile, easy bread dough.  Quick breadsticks too.  1 batch makes 1 sheet.  Pictured is a doubled batch!
Whether it's breadsticks, buns, or an easy loaf of bread, it all freezes well too.

Whole Wheat Seed Bread

We haven't made this bread in quite a while.  But we have recently moved to a new state and can't seem to find a whole wheat bread that gets both thumbs up from all of us at the local grocery stores.  So Sunday my husband pulled this old recipe out.  This may become a new Sunday tradition! :)  We ALL LOVE this bread!

Ingredients:
1/2 C warm water
1/3 C unsweetened applesauce
3 TBLS active dry yeast

3 1/2 C warm water
1/2 C honey
1/2 C molasses
1/2 C applesauce
3 TBLS lemon juice
2 eggs, beaten
9 C whole wheat flour
1/2 C ground flax seed
1 C quick cooking oats (rolled oats work great too)
1/2 C chopped walnuts or sunflower seeds
3/4 C cracked wheat or bulgur wheat
1 TBLS sea salt
5-6 TBLS vital wheat gluten

Directions:
Stir together the 1/2 C water and 1/3 C applesauce in a small bowl.  Dissolve the yeast in the mixture, let stand until creamy, about 5 minutes.  Pour the yeast mixture into a large bowl with 3 1/2 C warm water, honey, molasses, applesauce, lemon juice and eggs; stir together to combine well.
In a separate bowl combine the whole wheat flour, flax seed, sunflower seed (or walnuts), cracked wheat (or bulgur wheat) and salt.  Stir the flour mixture into the yeast mixture until a smooth dough forms.  Knead on a lightly floured surface until smooth and elastic, about 10 minutes. (Or let the Bosch do the work for you :)) Spray a bowl with olive oil and place dough inside.  Cover and let rise in a warm place until doubled in volume, about 1 hour.
Spray 3 loaf pans with olive oil.  (We pull off enough for a mini loaf, spraying that pan too, then shaping the rest into the 3 loaves.  That way when it comes out of the oven, as a family we eat a mini loaf. :)  We get hot bread, but we don't eat a whole large loaf, because believe me, we could! :) ) Punch down dough, shape into loaves and place in the pans.


Allow to rise in the pans until doubled in bulk, about 1 hour.
Preheat oven to 375.  Bake 40-50 minutes, or until the loaves are golden and crusty looking.

Homemade Pizza

Ingredients:

CRUST:
1 1/2 C Warm Water
1 TBLS yeast
1 TBLS honey
1 tsp salt
3 ish C whole wheat flour

TOPPINGS:
small can of Hunts Tomato Sauce (There is no sugar added in Hunts)
Shredded Cheddar Cheese
Shredded Mozarella Cheese
Diced Red onion
Diced Red/ Green Pepper
Sliced Mushrooms
Sliced Tomatoes
Chopped Spinach
Cooked Chicken
(other ideas not pictured: olives and pineapple)

Directions:
Preheat oven to 400 degrees.  Butter a cookie sheet, or half the recipe and butter a baking stone. Sprinkle with corn meal.  In a bowl, mix ingredients for the dough.  Adding the flour last and only 1/2 C at a time.  When the dough can be molded with your hands without it sticking to your fingers, there is enough flour.
Place ball of dough in center of buttered baking pan.  Press out to fill pan, or baking stone.  If getting too difficult to press out, let it rise for 10 min. and continue.
When dough is all pressed out, use a fork and poke it all over.  This will create small air holes and allow it to bake more evenly.
Pour the tomato sauce on top.  Then top with cheese and your favorite toppings.  This is what ours looked like before going into the oven.


And here it is after it's been cooked for about 20 minutes.  We put the cooked chicken on after if comes out so it doesn't get more dried out while cooking.  The more "wet" toppings you put on, the longer it will take to cook.  Could take 25-30.  When you lift a bit of the crust up and it looks golden, it's probably done!  A favorite at our house!
