Jalapeno Cheddar Turkey Burger Recipe
Ingredients:
2 lbs. Ground Turkey
1 Tbs. Avocado or Olive Oil
½ onion
4 garlic cloves
2 large jalapenos, seeds removed
1 ½ tsp. cumin
½ tsp. Chili powder
1 tsp. Salt
½ tsp. Ground pepper
1 cup shredded cheddar cheese (or a slice of cheese melted on top)
Ingredients:
2 lbs. Ground Turkey
1 Tbs. Avocado or Olive Oil
½ onion
4 garlic cloves
2 large jalapenos, seeds removed
1 ½ tsp. cumin
½ tsp. Chili powder
1 tsp. Salt
½ tsp. Ground pepper
1 cup shredded cheddar cheese (or a slice of cheese melted on top)
Directions:
1) In a food processor, coarsely blend together onion, garlic, jalapenos, cumin, chili powder, salt, and pepper. You can also mince all these by hand if you do not have a food processor.
1) In a food processor, coarsely blend together onion, garlic, jalapenos, cumin, chili powder, salt, and pepper. You can also mince all these by hand if you do not have a food processor.
2) On stovetop, heat the oil in a frying pan. Once heated, saute the blended or minced veggies and spices until onions are translucent and spices are fragrant. Don’t skip this step! Sauteing helps bring out all the flavors of the veggies and spices.
3) Once veggie/spice mixture is cooled slightly, combine them thoroughly with the ground turkey and the shredded cheddar cheese (unless of course you want to save the cheese and put slices on top of the cooked burger).
4) Form into balls about the size of your palm, and flatten into burgers. Fry them up on the grill, or stove top. Top with your favorite veggies, and wrap in lettuce.
Notes: This recipe makes a lot, which is great because then you have meals for days!! I always cook some, and then put the rest of the raw patties in a tupperware and store in the fridge or freezer depending on how soon I plan on eating them again. When storing the patties, I suggest putting a layer of wax paper, or parchment paper, or aluminum foil in between so that the patties come out a little easier. They can be sticky in raw form, fyi!

Homemade Turkey Sausage
I STILL haven't been able to find a good spicy sausage at the grocery store that isn't full of corn syrup or other things we really don't want in our diet. Don't know why I hadn't thought to look this up before, but found a recipe at AllRecipes.com that we were all pretty happy with!
Ingredients:
1 lb ground turkey
4 tsp Rubbed dalmation sage (2 tsp if using Ground Sage)
1 tsp salt
1 tsp black pepper
1 tsp red pepper flakes
1/2 tsp dried marjoram
Directions:
Mix all ingredients together in a bowl. I used my hands and squished it all through to really get the spices mixed through well!
We used it to make sausage as a pizza topping. You could make into patties or links in place of "breakfast sausage" as well. Fantastic flavor! Just shape and brown up in a pan on the stovetop!
We chopped up red onion, green peppers and mushrooms and sprinkled all over the sauce.
Add the cheese and cooked sausage.
And this is what came out of the oven!

Asian Burrito
Found a recipe to make my own Hoisin sauce so we HAD to try these burritos! HUGE hit! The kids devoured them! (No leftovers!) Cabbage, ginger salsa and all! YUM YUM YUM!! I love it when new recipes are not duds!
Ingredients:
1 lb ground turkey
1 C oats
3 TBLS water
6 TBLS soy sauce
2 TBLS real peanut butter
1 TBLS honey
2 tsp rice vinegar
2 tsp tahini
1/8 tsp pepper
1/8 tsp cayenne pepper (optional)
Whole wheat tortillas
2 C shredded cabbage
2 carrots, grated
Ginger salsa:
2 tomatoes
chopped cilantro
2 tsp finely chopped fresh ginger
Directions:
Prepare ginger salsa and set aside.
In a skillet, cook ground turkey (or beef) until browned. Drain grease and stir in oats. Add oats through cayenne on the ingredients list. Let simmer for a few minutes to blend flavors.
Warm tortillas and fill with meat mixture, top with cabbage and carrots, and the ginger salsa. Wrap it up like a burrito to enjoy!
EXTRA: Sometimes the meat gets pretty dry with the oats soaking up all the juice. So I add 1/4 C water at a time until it's the consistency I would like to put in my burrito. Sometimes only 1/4 C sometimes 1/2 C.
ALSO if you are avoiding gluten this is great as a salad! Loose the tortilla and pile some meat on your bed of cabbage and carrots, topping with the ginger salsa! So fresh. So yum!

Cube Steak & Romano Cheese
Ingredients:
1 pkg Cube Steaks
Grated Romano cheese
Red onion, finely chopped
Directions:
Preheat Broiler.
Meanwhile, in a skillet, brown cube steaks to your liking, salt and pepper to taste.
Place beef on a broiler pan and top each steak with cheese and red onions. Stick under the broiler to melt, then serve.
We had this with baked potatoes, roasted zucchini and yellow squash, and baked acorn squash. Total hit! And a very easy meal! (Other than the complaint that "it smelt funny"- that cheese is strong! But once that first bite was taken, it was all devoured quite quickly ) :)

GIANT Meatballs (to go with spaghetti)
While trying to cook and eat more healthy, finding new recipes we can use is always nice. We had a fun breakthrough tonight! I've wanted to figure out something to "replace" bread crumbs in a recipe. (Get rid of the enriched, bleached flours, hydrogenated "stuff", sugars, etc. ) We decided to try blending oats into a flour and substituting the oats for the bread crumbs! Worked great! NEVER would have been able to tell the difference. So excited about this new find.
Ingredients:
- 1 pound lean ground beef
- 1 cup blended oats
- 1/2 TBLS Italian Seasoning
- 1 TBLS dried parsley
- 1 TBLS grated Parmesan cheese
- 1/4 tsp ground black pepper
- 1/8 tsp garlic powder
- 2 egg
Directions:
Mix all ingredients in a bowl. Combine well. Shape into 12 balls.
Brown slightly in saucepan for 5 minutes. Turning carefully with slotted spoon.
Pour your favorite spaghetti sauce over the slightly browned meatballs, cover and simmer for 30 minutes. Enjoy with whole wheat spaghetti noodles, rice noodles, or spaghetti squash!
