Ingredients:
3 large eggs
3 C milk
3/4 C molasses
3/4 C no sugar added applesauce
1 1/2 C wheat bran (We get this at Good Earth)
1 1/2 tsp salt
3 tsp baking soda
4 1/4 - 4/1/2 C whole wheat flour (depending on what brand of molasses you use. If you use Grandma's Molasses, do 4 1/2 C flour, if you use Blackstrap Molasses use 4 1/4 C flour)
2 C raisins
1 C chopped walnuts (or if you don't like nuts, do 3 C raisins)
Directions:
Add everything in large mixing bowl in the order above. (We do this in our Bosch, but any large bowl and beaters will do just fine.) Spray muffin tins with olive oil. (Cupcake papers don't seem to work well with this; the paper sticks too much)
We use a 1/4 C measuring cup to scoop the batter into the tins. (it's pretty runny dough)
Fills 24. (2 whole pans) PERFECTLY! (so if you have filled all 24 and you still have dough, they aren't full enough. they will puff up when you bake them) they really do fit into 24 pretty darn good!
Bake at 375 for 17-20 min. Check with toothpick for doneness!
After they have cooled a bit we use a knife to get them out and store them in 2's in sandwich bags in the fridge. I LOVE them heated with a little butter and honey. They are great plain jane as well. Remember to have at least one while still warm out of the oven! YUM!
