Quiche

Ingredients:

Crust:
6 1/3 TBLS Butter,softened
1 C whole wheat flour (If using Garbanzo bean flour omit the water)
1/4 tsp salt
2 TBLS cold water

Filling:
2 handfuls of spinach, really chopped
4 eggs
1/2 lb ham (We use Oscar Myers Naturals brand Ham)
2 C half and half
4 oz swiss cheese, shredded
onion salt
3/4 tsp salt
a couple dashes of pepper (optional)

Directions:
For the crust: Soften the butter, add the flour and salt.  Cut in with a fork until crumbly.  Add the cold water and mix with fork until it all comes together.  Place ball of dough on a slightly whole wheat floured surface.  Roll out with a rolling pin.  Put pie crust in pie pan.
For the filling: Place chopped spinach in the crust, then sprinkle the chopped ham on top.
 Then the shredded cheese.  Sprinkle with onion salt.  
 In a bowl, mix the eggs, half and half, salt and pepper.  Pour into the pie pan over the other ingredients.  Place in the oven.

Bake at 425 degrees for 15 minutes. Then reduce the heat to 325 and cook an additional 40 minutes or until knife inserted comes out clean.
