Chili

Ingredients:
1/2 C EACH dried beans soaked overnight: red beans, black beans, kidney beans (you can do 1 can of each but 1. Some canned beans have added sugar...I know...LAME! and 2. This way is SO much cheaper!)
1 lb hamburger, browned and drained (optional)
2 cans diced tomatoes
1 C frozen corn
1 red onion
1 Red Pepper
4 C 100% tomato juice or 100% vegetable juice
2 TBLS chili powder
1 tsp cumin
2 C water

Directions:
Soak beans overnight (How you do you soak bean? Scoop out 1/2 C of each kind of bean into 1 large mixing bowl.  Fill with water, and walk away :) In the morning they are ready to drain and pour into your crockpot!)
Brown beef in a skillet on the stove top if you are adding that.
Add the rest of the ingredients into the crockpot.  The liquid should just cover all the veggies and beans.  If it's not quite enough, you can add more juice, or water!
Put the lid on and cook for 6-8 hours!  We love to top our chili with shredded cheese and serve with corn muffins!
