Cinnamon Raisin Bread

Yay I found another healthy breakfast idea!  This recipe said it was best used in a bread machine, but since I don't have one of those, I just did it like this.  Seemed to work. YUM!

Ingredients:
3 C whole wheat flour
2 tsp cinnamon
1/2 tsp salt
1 C hot water
1/2 C coconut oil
1/4 C honey
2 tsp yeast
1 C raisins

Directions:
Mix up all your ingredients with a fork and dump into a greased loaf pan. (I used coconut oil to grease the pan)  Cover with a hot wet towel and allow to rise.  I wanted to speed up the process so ever 20 minutes or so I would re-wet the towel in very hot water and cover the bread again. :)
When loaf is at desired height, bake at 350 for 30-45 minutes.  Excellent filling toast for breakfast!
