We made these as an attempt to have something different for breakfast. We enjoyed them with some fresh fruit and yogurt. They are kind of a cross in texture between an oatmeal cookie and a biscuit. I think they are pretty versatile and could fall in the snack or even treat category...although they are not sweet at all. (Maybe as a "cookie sandwich" with that homemade pumpkin ice cream we had at Thanksgiving?...Now We're talking!:)) Either way, glad we came across them. What would I do without the internet!? : /
Ingredients:
1 C whole wheat flour
3/4 C oats
1/2 tsp baking soda
1/4 tsp salt
1/4 C applesauce
3 TBLS pure maple syrup
2 TBLS butter, softened but not melted
1 egg
1 tsp vanilla
1/2 C chopped pecans
Directions:
Preheat oven to 375 and spray a cookie sheet.
In a bowl, mix together applesauce, maple syrup, butter, egg and vanilla. Then add in the flour, oats, soda and salt. Fold in the nuts with a spatula. Drop onto prepared cookie sheet and bake for 8-9 minutes or until they just start to brown.
We made these again and doubled it! Cookies freeze well too!
Even though I am not usually much for pecans, these sound good. I think I might give 'em a try...
